the Culinary Institute of America.
This post dedicated to my bro-in-law Pat and my niece Alexis. Wish you guys could have been there with me. You would have loved it.
One of the CIA schools is located in Napa Valley (St. Helena). While out San Francisco way, one of my goals was to visit the CIA. Bill and I were the only two people on the tour and because the students were not back in session yet, we got to go *behind the scenes* where tours usually don't go.
First the building is fabulous. Once a winery run by the Christian Brothers, the architecture is amazing. It looks like a stone castle sitting on top of a hill. The CIA was able to purchase the building and land for 1.5 million - even though the asking price was 12 million. The owner then turned around and donated the other 10 million to the institute. How awesome is that!
We walked through the kitchen where the students work on ovens and worktops enclosed in an island that cost $250,000 each! Each island has gas, electric, hot plates etc so the students learn to cook everything on any kind of cooktop possible. The entire bottom portion of each island houses 4 ovens (2 on each side) in red enamel. Originally ordered in red, the ovens were shipped from France in blue enamel - so back they went and new red ovens were shipped.
This is the place where culinary history is made.

Our guide was lucky enough to be working the day that Julia Child visited the CIA.
We ate at the Wine Spectator Restaurant located adjacent to the CIA.
Overall, an amazing experience. I wanna go back and take classes (and yes, I'm whining here).
